Confin Single Vineyard Sauvignon Blanc, Chile - 2010
(Special Bin End - Tartrates)
Tartrates are odourless, tasteless and harmless - care just has to be taken when pouring if you do not wish to ingest these.

This is an exceptional wine from the Anakena Winery in Chile. However, this has been reduced due to the formation of tartrate crystals.
The formation of tartrate crystals are actually a sign of a good wine as these crystals form when tartaric acid and potassium, which are both found naturally in wine, form together under cold conditions to form potassium bitartrate. This can be prevented by `cold stabilization` - a process in which the winery freeze the wine, which causes this precipitate, and filter it out before bottling. A quality wine is more likely to have tartrates as the winery will not want to over process their wines, but instead have all the flavour intended from all the elements in the grapes.
NB These tartrates are the same substance found in cream of tartar used for cooking and baking.

Made from 100% Clairette grapes, this wine comes from the sunny Languedoc region in the South-East of France. Clairette is a unique style of grape, one of the oldest found in the region and is one of the 13 grape varieties permitted in the production of Chateauneuf-du-pape.This wine has flavours of aniseed, peach and dried fruits - well balanced and full-bodied wine.

This Spanish stunner has a cherry colour and  is very complex, with hints of fine woods and spices. It is a very ample, meaty, round wine with tannins balance. Overall, it is very elegant.
This particular vintage is throwing a higher than normal sediment - however after decanting this wine it is a fine example of a robust red!

          

                            
Pago de Carraoviejas Crianza, Ribera del Duera, Spain - 2003

Made from Tinto Fino (85%) and Cabernet Sauvignon (15%) this wine is a deep and glossy purple crimson colour. The chief aromas are of blackberry and raspberry with alluring spice, toasty oak and mineral qualities. The palate is fruit packed yet perfectly balanced with nuances of coffee, chocolate and black fruits. The length is extraordinary. Will accompany most lamb dishes very well and will complement roast beef venison and roast pheasant.            
     



Pignolo Rosso Rosso Orientali, Gagliano di Cividale, Italy - 2004

This 100% Pignolo is a massive wine ; rare selection of grapes coming from a single vineyard located in Gagliano di Cividale. Deep red-to-black colour; dry and firm tannins on an aromatic, ripe nose;
On the palate, sweet black berries and a smoky, spicy note with a very long finish. Perfect match for smoked meats, pork dishes , pasta with rich savory sauces, roasted wild game dishes.
